Today I’m bringing a small piece of my favorite spot in Universal Studios Florida to my home (and yours!) by whipping up some Irish Soda Bread from my friends at Finnegan’s Bar & Grill.
INGREDIENTS
- 5 cups of all purpose flour
- 1 teaspoon of baking soda
- 1 tablespoon of baking powder
- ½ teaspoon of iodized salt
- 1 cup of buttermilk
- ½ cup of unsalted butter
- 1 teaspoon of granulated sugar
- A Whole Lot Of Apple Butter
DIRECTIONS
- Preheat oven to 375°
- Mix 4 cups of the flour, the baking soda, the baking powder, the salt, and the sugar all together in a large mixing bowl. (Yep, we left out 1 cup of flour, but just hold on tight to it, it’ll have its time to shine.)
- Add the buttermilk and butter to your mixture of dry ingredients from Step Two and mix all ingredients together. (Except for that 1 cup of flour!)
- Ensure all items are well mixed. Your dough may be slightly sticky, so feel free to use some of that 1 cup of remaining flour to help manage the dough.
- Tear off about 10-12 baseball-sized dough balls and place them onto a baking tray with parchment paper.
- Use the remaining flour to dust each dough ball before placing the tray into the oven.
- Cook for 12-14 minutes.
- Smother with apple butter and enjoy!

Is the butter melted, cubed like in scones?
I melted the butter.
My dough was entirely too dry. I had to add water, and I never added the last cup of flour. So mine only had 4 cups of flour total.
Also my dough only made 9 balls. They were not baseball sized before going in the oven. I would say somewhere more like a small T ball.
This is not my first time making bread, and I am aware that flour is very dependant on the moisture in the air. I was still surprised that my flour was so dry.
I don’t think mine came out right because I didn’t know what to do with the butter either 🤷🏻♀️
I’ve always used melted butter for soda bread. It is usually only cubed if you want a flakey texture, like a biscuit or scone.

I melted the better and it mixed very well. I sifted the flour and ended up not using the extra cup of flour in the dough. However, I think I should’ve made my 10 dough balls smaller because while the outside was perfect, the centers were a tad undercooked.
Sorry about that! The good news is, you can always try again because maybe every day is a good day for Soda Bread? 🙂
Mine ended up tasting like biscuits. Dough was dry also do I added in a little more buttermilk. I’m not sure if biscuit taste is how it’s supposed to be, but they were tasty!

Wonderful! Easy, delicious… my 91 year old mother wants them all the time & will have them!
So yea as is, the recipe is dry and leaves the bread underbaked. How I got this recipe to work is by adding 2 cups of buttermilk instead of one and baking for 20 minutes at 375. Also definitely melt the butter as it’s be hard to work into the dough solid or even slightly softened. Also, if you like raisins, add 1 cup of them to the dry ingredients before you mix the wet.
