Every year, I look forward to Thanksgiving. It’s my family’s favorite holiday, mainly because we all love to cook! There have been many years where we’ve cooked two, or even three, whole turkeys, all wanting to try our own unique recipe. But the real question is, what do you do with leftovers? Chef Aaron Hiner from the Universal CityWalk food and beverage team has the perfect solution: the Holiday Sandwich from Bread Box Handcrafted Sandwiches.
“The beauty of this sandwich is that anyone can make it using the traditional Thanksgiving leftover ingredients,” Chef Aaron says. “You can layer the ingredients and use as little or as much of each as you prefer, as well as the versatility of the sandwich to be served on any kind of bread. I’ve even made it into a wrap using a tortilla!”
Here are Chef Aaron’s top tips to make your Holiday Sandwich as delicious as possible:
- Re-heat the turkey using some turkey stock or gravy to keep it moist.
- Press the stuffing into a patty and pan fry it to give it a crispy outside texture.
- Incorporate sage aioli to give a good savory element to the sandwich while counteracting the dryness that can often happen with white meat turkey.

The Recipe
Sandwich
Ingredients:
- 4 oz of roasted turkey
- 6 tbsp of stuffing (box stuffing mix will do just fine)
- 6 tbsp of mashed potatoes (store-bought is great, unless your Uncle Chuck is known for his world-famous mashed potatoes)
- 1 tbsp of unsalted butter
- 2 slices of cranberry bread (or your favorite sliced bread)
- 1 tbsp of sage aioli
- 6 tbsp of gravy (use your favorite gravy recipe)
Instructions:
- Preheat a grill pan on the range. Spread your slices of bread with butter and cook until golden brown.
- Place turkey on the grill until it has a light golden look.
- Grill stuffing to reheat and give it a crust.
- Reheat the mashed potatoes to 165 degrees.
- Remove all ingredients from grille.
- Spread 1 tbsp of sage aioli on each piece of bread.
- Place the turkey on the bread, followed by 6 tbsp of mashed potatoes and 6 tbsp of stuffing.
- Cut the sandwich in half.
- Place the sandwich on a plate and serve with gravy on the side.
Sage Aioli
Ingredients:
- 1.5 cups of mayonnaise
- 2 tbsp of fresh sage
- 1 tbsp of orange juice
Instructions:
- Finely chop the sage.
- Mix mayonnaise, chopped sage, and orange juice in a bowl.
